San Giovanni comes from Castello della Sala’s vineyards and is made with a blend of Grechetto, Procanico, Pinot Bianco and Viognier, a contemporary representation of Orvieto Classico.

San Giovanni comes from Castello della Sala’s vineyards and is made with a blend of Grechetto, Procanico, Pinot Bianco and Viognier, a contemporary representation of Orvieto Classico. The vineyards are on soils rich in fossil deposits with veins of clay that give the wine minerality and elegance.
Winemaking
The grapes were brought to the cellar and each individual grape variety was fermented separately to enhance their unique varietal characteristics. Part of the must was cold soaked on the skins for about 6 hours and then blended with the other part that was only gently pressed. The blended must was then transferred into temperature controlled stainless steel tanks where alcoholic fermentation took place. The wine was left to age on the lees for several months and up until the final blending and bottling to enhance its structure, elegance, and mineral characteristics.
Historical Data
Castello della Sala was built in 1350 by Angelo Monaldeschi della Vipera whose family arrived in Italy in the IX century following Charlemagne’s troops. The 1300’s marked the beginning of a long series of conflicts between family members in order to gain control over Orvieto. In 1437 Gentile, grandson of Angelo dei Monaldeschi della Vipera, gained control of the city and reigned as dictator for over a decade. Following Gentile’s death in 1466, a peaceful period started at the castle, culminating with the reconciliatory marriage of Gentile’s son, Pietro Antonio della Vipera, and his cousin Giovanna Monaldeschi della Cervara. In 1940 Marchese Niccolò Antinori, Piero’s father, bought the estate fully aware of the fact that the area held great potential for producing fine white wines. After years of neglect, Castello della Sala moves towards a period of rebirth.
Tasting Notes
The nose presents floral notes and hints of ripe fruit especially peaches and pineapples. The palate is mouth filling, well-balanced, persistent and is sustained by excellent freshness.
