The wine
The “Arso”, the Italian adjective for “burnt”, Cabernet Franc is grown in the The Murgia of Puglia and farmed organically. Cabernet Franc grown here offers more depth and energy and is less powerful and more savory on the palate.
Vinification
In a land of red wines, an outstanding white. The Bocca di Lupo estate is located at an altitude of 250 meters above sea level (820 feet) in the heart of the untamed Murgia area near Minervino Murge about 90 kilometers west of Bari. The estate’s certified organic vineyards grow on calcareous, low nutrient soils that are optimal for producing wines that are elegant, lively with well-defined aromatic precision.
Winemaking
The fruit was hand harvested and placed into crates. After destemming, grape clusters were meticulously selected on sorting tables to ensure that only perfectly healthy, ripe berries reached fermentation vats. Maceration on the skins took place for approximately 20 days while performing a combination of punch downs and gentle pump overs. Once maceration was completed, the wine was transferred to new French oak barriques where malolactic fermentation took place and aging continued up until bottling.

Tasting Notes
The nose offers aromas of forest floor, black cherries, and sour cherries together with hints of licorice, tobacco, and bitter cocoa. The bouquet is completed with balsamic notes that echo marine breezes that caress Mediterranean scrub along the coastline. The palate delivers tannins with depth accompanied by well-balanced freshness and savory notes, characteristic of the wine’s place of origin.
